Sweet and Easy - Strawberries and Cream Dessert with Lemon Curd



This five minute pud is ideal for a quick weekend dinner party dessert, or simply an indulgent treat for a sweet tooth!


INGREDIENTS

½ packet or 125g of ginger nut biscuits
Jar of lemon curd
Punnet of fresh strawberries
300ml whipping cream, whipped
2tbs icing sugar
Bar of dark chocolate, grated or cigars

You will also need 4 large tumblers to serve

Makes 4 portions

METHOD
Bash biscuits in packaging or bag with a rolling pin, so they are the consistency of sand, place a knob of unsalted butter on a dish and melt in microwave for 10 seconds, mix together.


Fill the bases of glasses with 3 heaped dessertspoons of the mixture.

Loosen the lemon curd by stirring with a spoon for a minute, add a dessert spoon or two on top of the base.

Slice the strawberries widthways and add layer at the bottom.

Whisk the cream with 2tbs of icing sugar, then spoon on top.

Layer with strawberries and a further spoonful of lemon curd, then another cream layer.

Decorate with dark chocolate.
